Peanuts

The most versatile and well known nut is actually not a nut but rather a legume: the peanut. Grown all over the world (Africa, USA, China, India, Argentina, Nicaragua) and in many varieties (Spanish, Runner, Virginia, Common Natal, Java, Valencia among the most common), this ingredient has been grown by humans for centuries. Today China is the largest producer, followed by India and the USA, though India is the largest exporter as the other two countries domestically consume most of their production. With a wide variety of uses including bakery products, confectionary, paste, butter, oil, ink, lipstick, soap, margarine, explosives, paper and shampoo, it is easy to see the importance of this ingredient in human society. Most importantly, the peanut has a very high nutritional value, providing many of the vitamins, minerals and unsaturated fatty acids needed on a daily basis.

Cashews

One of the most popular nuts with consumers, this exquisite nut was native to Brazil before Portuguese settlers took the cashew plant in the 1500’s to India, from where it spread through Southeast Asia and Africa. Today the major commercial producers are India, Cote d’Ivoire and Vietnam. The cashew nut has a sweet flavor, growing from the cashew fruit, encased in a very hard shell. Once harvested it undergoes a heating process to allow the very hard shell to crack. Cracking is either done by hand or machinery. Rich in selenium, magnesium, Vitamin B-1 and iron, this nutritious ingredient is always a favorite with consumers. The cashew nut is frequently used in bakery applications, oils, mixed nut assortments, confectionary, snacks and on its own as a garnish or additive.

Almonds

Predominantly grown in Spain in early days, the almond is now grown mostly in the USA (over 75% of global production). Highly nutritious in fiber and vitamin E, almonds help protect the body against chronic diseases and provide healthy bowel functions. There are at least 25 varieties of almonds comprising of 10 main types (Nonpareil, Carmel, Butte, Padre, Mission, Monterey, Sonora, Fritz, Price, Peerless). Almonds are used most commonly in the bakery, snack, confectionary and ice cream industries.

Pistachios

Pistachios have been around for a very long time, with evidence linking their regular consumption by humans as far back as 6700 BC in Iraq and mention of pistachio trees in the Hanging Gardens of Babylon (700 BC). This tasty nut was grown historically in the Middle East, with commercial production being incorporated into the USA (California) in the 1970’s, quickly growing to become today’s largest producer. Today’s notable producers of pistachio nuts are, in descending order: USA, Iran, Turkey, Syria, Afghanistan and Greece. The pistachio tree produces a full crop every other year, with a smaller recovery crop in between. This nut is very popular globally, with kernels being eaten either fresh or roasted and salted. Pistachios are commonly used in ice creams, butter, oils, bakery products, on its own as a garnish and even in meat products (mortadella). The pistachio is also very healthy, high in potassium, dietary fiber, minerals (copper, thiamin, phosphorous) and vitamin B-6. Studies indicate that consumers can lower cholesterol by as much as 10% with 32-63 grams daily consumptions of pistachios.

Hazelnuts

Turkey has long been a global supplier of hazelnuts, accounting for over 70% of global production in the early 21st century. The harvesting, sorting and cleaning is done by hand or machine. The cracking, blanching, polishing, chopping and grinding occur in factories. Commercially grown also in Italy, Spain and the USA, this ingredient is thoroughly enjoyed throughout Europe in products such as chocolate, flour, pastes, bakery items, confectionary and snacks. Being very nutritious in minerals, unsaturated fats and Vitamin E makes this tasty nut a healthy choice when deciding to snack.

Macadamias

Considered a relatively new nut, it is claimed to have been discovered in 1857 in Australia. Indigenous to northeastern New South Wales and southeastern Queensland, this nut is also grown commercially in South Africa and the USA, accounting for over 70% of global production from these regions. Commercial success has also been reached in Costa Rica, Guatemala, Mozambique, Zimbabwe, Brazil, Kenya, Malawi and Colombia. Macadamias contain about 75% unsaturated fats by content. This makes them a nutritious source of unsaturated fat, lowering cholesterol in the process. Macadamias come in 9 sizes (styles 0-8, < 3mm all the way up to 19 mm). Since harvesting is done manually in most countries the cost of this ingredient can be high. Macadamias are used in bakery and mixed nut applications. The high fat content also makes them ideal for skincare products.

Pecans

Pecan trees have grown wildly in the southern USA for a long time, with Native Americans consuming wild grown pecans for centuries. Through orchard cultivation, by the late 1800’s the pecan nut was being commercially harvested in Georgia, Texas, New Mexico and Oklahoma (among other USA states in smaller volumes). The USA produces over 90% of the global pecan supply. The pecan tree grows nuts on a 2 year cycle, with a large harvest every other year. South Africa, Mexico and Australia also produce pecan nuts. Mainly used in bakery applications (paste, butter, pies), the nut is also very tasty when eaten in assorted nut products. The pecan nut has a relatively high content of zinc and unsaturated fats.

Walnuts

One of the best known nuts, the walnut is a very popular nut consumed globally by many populations. Walnuts are commercially grown in the USA and China (largest producers), Turkey, France, Ukraine, Chile and Moldova. In the USA there are 4 types of walnuts: Hartley, Franquette, Payne and Eureka, which are graded in Jumbos (purple stamp), Large (red stamp), Mediums (green stamp) and Baby Nut. Walnuts are used in a multitude of food applications, notably bakery, confectionary, snacks and ice cream products. The walnut is also very nutritious, being high in protein and antioxidants, thereby providing a positive effect on cardiovascular diseases and lowering cholesterol.

Brazil Nuts

Brazil nuts, also known as Paranuts or Amazonia Nuts, grow wild on tall trees reaching in excess of 40 meters in the Amazonian jungles of Brazil, Bolivia and Peru. Locals pick up the nuts from the forest floors after they fall from the tall trees and sell them to traders who take the nuts to market. The Brazil nut is very nutritious and tasty, containing very large amounts of proteins, fats, calcium, phosphorous and magnesium. Most notably the Brazil nut is a huge source of selenium. This nut is most commonly used in assorted nut products.

Raisins

Consumed globally and used in a multitude of applications, the raisin is one of the most well-known dried fruits. After harvest grapes are either dried mechanically or in the sun, turning a dark blue color in the process, regardless of the color of the original grape. Turkey produces a very high quality raisin and has historically been a renowned global producer of raisins. Meanwhile the USA, China, Iran, India and Chile are also significant producers. The USA leads the producers due to the modernized farming and processing systems in place. Raisins are excellent sources of dietary fiber and antioxidants, while containing minimal amounts of fat and sodium. Applications are plentiful and throughout, including confectionary, bakery, cereals and many more.

Dried Cranberries

Grown all over the USA, eastern Canada and now Chile, cranberries are a tasty and healthy snack. They grow best in sandy bogs and marshes. Once ready for harvest, fields are flooded, the cranberries rise to the top and a wet harvest occurs with workers easily pulling the cranberries together. The cranberries are then cleaned and dipped in cranberry molasses to add a sweet flavor while increasing the shelf-life, followed by drying. Dried cranberries have a multitude of applications including bakery products, bars, muesli, coated in flavors, soups, sauces and trail mixes. Due to a component of the cranberry that prevents bacteria from adhering to bladder cells, they are great at treating and preventing inflammation and infection of the bladder and urinary systems. They also contain minerals and vitamin C.
